Burdock recipes
The first time we ever ate Burdock was when we lived in Japan. Only there it's called Gobo. We loved Gobo and when we returned to our house on the hill, I discovered that Gobo is the Burdock that's growing everywhere.
It's a pain to dig them up especially in our rocky soil but they're worth the trouble because they're simply delicious.
Especially when young and tender, so you want to get the first year roots. We love them pickled too.
