Cattail flower bran muffins
Even though I'm not the biggest muffin fan, these I like a lot! They're not too sweet and the Cattail flower gives it extra texture and vitamins.
Ingredients:
1 1/2 cup wheat bran 1 cup buttermilk 1/3 cup vegetable oil 1 egg 2/3 cup brown sugar 1/2 vanilla extract 2 cups Cattail flower pulp 1 cup flour 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1/3 cup chopped walnuts Directions: Preheat the oven to 375 degrees and line the muffin cups with paper muffin liners. Mix wheat bran and buttermilk and let sit for about ten minutes. Mix the oil, egg, sugar and vanilla extract and add it to the bran/buttermilk mixture. In a big bowl, mix Cattail flower pulp with the flour, the baking soda, baking powder and salt. Add the bran/buttermilk and stir until just blended. Gently stir in the chopped walnuts and spoon the batter into the muffin cups. Bake for about 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. |
