Poached eggs with Lamb's-quarters
This delicious, quick and easy dish can be used as a lunch or appetizer. Please try it, you won't regret it!
Ingredients:
2 eggs 2 teaspoons white vinegar Butter 2 handfuls of Lamb's-quarters Salt and pepper to taste 1 tablespoon orange juice 2 dollops of sour cream Croutons (I prefer to make my own with just a bit of salt and pepper) 2 sprigs of Chives, chopped Directions: Poach two eggs. I bring a pot with water to a boil. When the water is about to boil, I add the white vinegar and gently transfer the eggs into the water. I cover the pot, lower heat to simmer it for 4 minutes. Melt some butter and sauté the Lamb's-quarters with some salt and pepper and a tablespoon of orange juice. Divide the Lamb's-quarters over two plates. Add a dollop of sour cream on each bed of Lamb's-quarters. Place the poached eggs on top of the sour cream. Sprinkle with croutons and chives. Serves 2. |
